I make three different versions of this same recipe depending on who is enjoying it. I make a vegetarian version, a traditional version and a meat lovers version. I have included all the variations for your enjoyments.

Baked Ziti

 

Traditional Ziti:

2 jars of your favorite spaghetti sauce

2 boxes of whole wheat noodles (I prefer to use one box rigatoni and one box penne)

1lb ground fat free turkey

1 zucchini

1 summer squash

1 small/medium eggplant

1-2lbs. sliced mushrooms

½ cup diced onion

2-3 tablespoons minced garlic

2 cups mozzarella cheese

1 cup shredded parmesan/romano cheese

1 24oz container of fat free cottage cheese

Brown meat in a skillet with onions and garlic. Add diced vegetables to skillet and sautee with meat mixture. Stir in both bottles of spaghetti sauce into the skillet. Season to taste with Italian seasoning, basil, oregano, onion power, garlic powder, parsley  and pepper. Allow to simmer while cooking noodles per package instructions. Preheat oven to 350° F as you stir together cooked noodles, sauce mixture and cottage cheese. Pour the entire mixture into an oven safe casserole dish. Cover with mozzarella and parmesan/roman cheeses.  Place in oven for 15-20 minutes or until the cheese bubbles.  Allow to cool for five minutes. Serve and enjoy. I suggest pairing the ziti with a Caesar Salad and garlic bread.

Vegetarian Ziti

Make as above without meat, double all vegetables

Meat Lovers Ziti

Make as above without squash, zucchini, eggplant and mushrooms. In place of vegetables add in 1 cup diced prosciutto.
